I don’t make Merenguitos (merengue) often enough for my family, but when I do they are literally gone by the time they are cool enough to eat!!! They are pure Airy, Fluffy Goodness! This recipe is easy and quick to make, probably something the kids would enjoy making too.
Ingredients:
- 4 eggs (just the whites)
- 1 cup of powdered sugar
- 1 cap full of vanilla (optional)
- Food coloring (optional)
• Separate the eggs and put egg whites in a bowl, add vanilla
• Turn mixer on medium, progressing slowly to high.
• Mix until egg whites start to form soft peaks/creamy
• Add powdered sugar 1/2 cup at a time
(this doesn’t have to be perfect, it’s just so you don’t get covered)
• Once it’s all incorporated, mix on high until your egg whites for peaks
• Grab a sandwich baggie and scoop mix in, cut the tip and squeeze the air out gently
(you can use a pastry bag if you have one, and add a pastry tip for a cute design)
• Squeeze a dollop on the pan
• Cook on 280 for 40 min or so
If you don’t add vanilla or any flavoring, they will come out super white! We like them both ways :o)
**Vanilla can be substituted with almond extract ~ I haven’t tried it but it should be fantastic! OR you can leave it out all together if you’d like
**If you add food coloring, I would add it while the egg whites are still pretty “liquidy”
