These baguette slices topped with goat cheese & sweet roasted peppers are wonderful! This week I was looking for a way to make something quick, tasty, but not too heavy on the stomach.
My family is the “snacky” kind, so on weekends, I like to make things that we can kind of pick at here and there. Even if we sit down for dinner, we can have a few different things to entertain our pallets.
These have officially been added to our family’s favorite recipe binder!

Ingredients:
- One loaf of baguette, sliced diagonally into about 20-25 pieces (I was able to cut about 25 pieces from one loaf)
- Extra Virgin Olive Oil
- Sweet Roasted Peppers 12oz jar ( I used Valsic brand)
- Tub of goat cheese (I used Stella brand. They came in 3.5oz tubs and I used one and a half tubs)
- Chives, chopped (enough to top each one)
- Salt
Instructions:
Brush some extra virgin olive oil on each baguette slice. If you don’t have a cooking brush, you could just drizzle the extra virgin olive oil over the slices.

Place the baguette slices on a baking sheet, bake at 400° for 8-10 minutes.
While they are baking, slice or dice up the sweet roasted peppers.

And chop up the chives.

Once the baguette slices are finished, spread the goat cheese over each slice (this was my first time using goat cheese, I was surprised at how easily it spreads!!).

Lay some sweet roasted peppers on top of each baguette slice, drizzle a bit more of extra virgin olive oil over each one.

Top with chives and a bit of salt
