Our favorite meatloaf recipe! This is good. SO good. Most meatloaf recipes that I tried didn’t include cheese, but this one does. We’ve loved this recipe for years, and it’s freezer friendly!
1/2 large onion – basically one cup of chopped onion
1 1/2 cup of milk
2 tsp of salt
1 lb of ground beef
2 cups of shredded cheese (this makes it so awesome!)
1 cup of one minute oats (you know, the quick cooking kind)
Break the eggs apart and kind of whisk them a bit with the milk
Add in the onions, oats, cheese and salt and stir it up a bit so the salt isn’t sitting in one place
Add in the meat
Mix it all together (you’re going to have to get your hands a bit dirty…kids dig this part, so maybe delegate?)
Then shape your loaf on a baking sheet
To top you meatloaf before cooking mix:
1 cup of ketchup and 1/2 cup of brown sugar and just pour it over the top of the loaf. Smooth it out. (this will make a sweet glaze…SO good!)
Bake 45 minutes at 350. I rarely wait until it’s preheated, so I just add an extra five minutes to my timer and pop it in the oven while it’s heating.
This is a no-mess-up recipe that everyone loves! (and it’s pretty cheep to make which is a win/win in my book!)
