This Taco Soup is super yummy, and incredibly easy!!! this recipe feeds 4 , and we have left over for a few more meals. I like to store about half of this batch in my freezer. It’s perfect for any time of the year, but we especially like it during the winter months.
2 lbs of ground beef
1 medium onion chopped
2 cans Black Beans drained and rinsed
2 cans Dark Red Kidney Beans drained and rinsed
2 cans Corn drained (not rinsed)
1 can Rotelle Tomatoes with Green Chilis
1 can Petite Diced Tomatoes (if you cant find Petite that’s fine, I just prefer a smaller dice to the medium ones)
2 8oz cans of Tomato Sauce
1/2(16oz) of a 32oz carton of Beef Broth (I buy the 32oz because I like to buy enough to make 2 separate batches)
2 packages of Taco Seasoning
2 1/2 cups of Water
Brown the meat and onion together. Add in all the other ingredients and cook until it’s hot. You can serve with cheddar cheese sprinkled on top and corn chips or with corn bread.
I’ve had it with the normal tortilla chips on the side, but last time we skipped the cheese and tossed some corn chips on it, with some corn bread on the side. It was yummo!!!!
